Super Bowl Recipe Round-Up

Today I'm joining a Pinterest Party over at The Lean Green Bean.  With Super Bowl right around the corner, I thought it would be fun to share a round-up of healthy Super Bowl appropriate dishes.  My team, the Giants, well, they stunk this year.  So, I'll be pulling for the Broncos, since I like horses and the Mannings (as my husband shakes his head and sighs).  Even if you just watch for the commercials, the Super Bowl is a great excuse to get together with friends.  Why not help them start the week off feeling great by serving something healthy for a change?

Chorizo Tempeh and Potato Tacos

I know I just posted this yesterday, but they are so perfect for Super Bowl that I had to share them again!  I love the idea of setting up a taco bar for the Super Bowl.  Serve these alongside grilled shrimp or black beans and plenty of warm corn tortillas.  Set out little bowls of fun toppings, like diced avocado with lime and green onion, a simple slaw, crumbled queso fresca, and chopped cilantro.



Tofu Sliders

These tofu burgers would make perfect little sliders!  Maybe you feel odd serving tofu to what's likely to be a heavily male audience?  Don't be - these burgers were hands down one of my husbands favorites on the blog. 



Indian-Spiced Guacamole

In my expert opinion, there are three Super Bowl essentials - two football teams, hoppy IPA and guac.  Mix up your standard guac with Indian flavors like curry, serrano chilies and mustard seeds. 



Grilled Vegetable Chili

When we first moved into our current house about 3 years ago, it was a couple weeks before Super Bowl.  We were so excited to be homeowners that we decided to host a Super Bowl party, despite the fact you could hardly see the TV over all the piles of boxes!  To keep it simple, I served chili.  Prepare it in advance so you'll be out of the kitchen and in front of the TV - one of the few times you'll hear me encouraging TV over cooking.



Zucchini Cupcakes

Another must have - something sweet!  I love these whole grain cupcakes, which are so nutritious, really, you could have one for breakfast.  Most of their sweetness comes from mashed banana, which is enhanced with a hint of maple syrup.
