Friday Five 5/9/14

Five Recipes:

Stacked Enchilada Pie (Keepin' It Kind) --> Layers of corn tortillas, black beans, and corn drenched in cashew cheese sauce and roasted red pepper enchilada sauce? I'll take two!
Ginger Beer Margarita (According to Elle) --> Finished my first week as a self-employed woman! I think I'll celebrate with a drink : )
4 Ways to Make Pesto Without Basil (Oh My Veggies) --> Y'all know I love my pesto. Never thought of making it with beets, but it sounds like an awesome addition to a veggie wrap.
Strawberry-Lemon Chia Curd (Edible Perspective) --> When I was making my blueberry corn muffins with meyer lemon curd, I was struggling to figure out how to veganize them. Why didn't I think of chia seeds?
Basic Thai Curry with Three Homemade Curry Pastes (Adventures in Cooking) --> Recipes for green, red, and yellow curry paste and a basic Thai curry recipe. Oh, and pictures of Thailand so incredible I just searched for flights on Kayak. Sigh...not this year.

Five Nutrition:

Five Non-Nutritional Reasons to go Meatless (Plant Based Dietitian) --> With the popularity of the paleo diet surging, many are starting to look at meat as a health food. While I agree that small amounts of organic, grass fed meat is fine and can even entertain it having some health benefits, there's still plenty of reasons to eat less (or none).
Do You Know Why You Hate Gluten? These People Sure Don't (TakePart) --> Good for a giggle. But on a serious note, come on people! There are so many people who suffer from major health consequences from gluten. If you believe gluten is bad for everyone (I don't), then you should at least know what it is.
Bromine out of Coke (NPR) --> Coke & Pepsi decided to stop using potentially dangerous emulsifier BVO in their products. Woo! And guess what? It's being replaced by other potentially dangerous additives. Oh, and it's still horrible for you. 
Our Alarming Food Future (Mother Jones) --> Scary stuff.
Why There's So Much Confusion Over Nutrition And Health (Life Hacker) --> Yes to everything.


Five Travel:

How To Eat On A Budget When You Travel (Travel Dudes) --> Really good, basic advice. In most countries, especially those that are off the beaten bath, I find you eat tastier food on a budget. P.S. For number 5, I pack Lara Bars.
What Europeans Really Think Of Us (Budget Travel) - "Why are you smiling? You don't even know us!" I'm guilty.
I Lost My Home, My Job And My Husband So I Climbed Mount Kilimanjaro (Yahoo) --> Love this story!
Best April Travel Pics (National Geographic) --> Wanderlust ahead. Love the ice cream guy in Turkey. It's seriously one of the coolest things.
Solo In Paris (New York Times) --> Don't get me wrong, I love traveling with my husband. Nothing is better than sharing a new place and experiences with the person you love. But after spending a few days exploring New York City on my own a few years back, I've got the itch to do a solo trip overseas. Paris seems like a nice option.

Five Randoms:

A Coffee Crop Withers (New York Times) --> Horrible, no good, very bad news.
An Open Letter To The Future Mrs. Clooney (New York Post) --> You go girl.
The Garden, Both Muse and Oracle at L'Arpege (New York Times) --> My mom send this to me with instructions to "use this as proof that vegetables are cool." So I am.
Fed Up (You Tube) --> What are your plans this weekend? If you live in one of these cities, please go see Fed Up and report back to this Columbia, SC girl!
The Waiting List (National Geograpic) --> Portraits of organ transplant recipients. Prepare for tears.
