Raspberry Rooibos & Green Tea Smoothies



I was so excited to find out our next Recipe Redux challenge was cooking with tea. As one of the ingredients I hoard, I had all sorts of unique teas to cook with. I was thinking tea smoked fish, green tea soba noodles, ice cream...all sorts of creative ideas. I couldn't wait to tell my readers all about the fabulous health benefits of tea!





But then reality hit. I realized I was about to go out of town for a week, probably didn't need to fill my refrigerator up with fresh foods but rather use up what I had. Now that I'm in Costa Rica with a belly full of fried fish, guacamole and plaintain chips with pool overlooking the ocean calling my name, preaching the benefits of tea has dropped pretty far on the priorities list.

Lets leave it with this.  Tea has lots of good stuff in it. It's also delicious. Here are two yummy tea smoothies.

Raspberry Rooibos Coconut Smoothie

Serves 1



1 cup frozen raspberries
½ cup frozen pineapple
½ cup coconut milk (light or full fat)
½ cup brewed rooibos tea

1 tablespoon chia seeds

Place all ingredients in a blender and blend until smooth. 




Gingery Green Tea Smoothie

Serves 1

1 frozen banana
½ a small avocado or ¼ of a large
Handful of spinach leaves
¾ cup brewed green tea
½ cup organic plain yogurt
1 tablespoon freshly grated ginger
Juice from 1 lemon

Place all ingredients in a blender and blend until smooth.
