Fourth of July Recipe Roundup

Headed to a cookout tomorrow for the Fourth? Your friends and family will appreciate it if you bring something healthy and delicious! Here are fifteen of my favorites.

Pineapple Guac (Flourishing Foodie) --> Love the addition of sweet and tart pineapple to creamy guacamole. And the Costa Rica pictures, obviously.


Grilled Okra and Tomato Kebabs (Cottage at the Crossroads) --> Okra is a summer favorite, but I bet you've never tried grilling it. Keeping okra whole keeps it from getting slimy and the grill lends a fantastic smoky flavor. Serve it with a yogurt-herb dip for an easy veggie appetizer.


Sesame Slaw with Tahini Dressing (My New Roots) --> This slaw is fantastic with my favorite tahini dressing. Plus, since it doesn't have mayo you don't have to worry about it sitting out.



Cornbread Panzanella Salad (Edible Perspective) --> Packed with heirloom tomatoes, strips of raw zucchini, crispy cornbread, can you think of a better way to highlight summer produce? I sure can't!

Lobster Potato Salad (Smitten Kitchen) --> I mean, come on now.


Dairy Free Macaroni and Cheese --> There's some kind of law stating macaroni and cheese should always be served at a cookout, right? If not, there should be! My dairy free version is a classic in our house.


Summer Tomato Cobbler with Blue Cheese Biscuits (Joy the Baker) --> Cobblers are a classic summer dessert, but don't you love this savory version? To make it a bit more nutritious, use spelt or white whole wheat flour in the biscuits.


Grilled Pizza --> Hot dogs and hamburgers have been done. Instead, make a big batch of pizza dough, set out plenty of toppings and let your guests make their own mini grilled pizzas!


Lentil Sloppy Joes --> If you don't have a grill, these vegan sloppy Joes pack plenty of smoky flavor!


Sticky Fig BBQ Tempeh (Nutrition Stripped) --> BBQ for vegans? Yes, it exists!


Turkey Burger with Gorgonzola and Chili Slaw (How Sweet Eats) --> Fancy up a classic turkey burger with a creamy gorgonzola sauce and spicy chili slaw.


Mango, Raspberry and Cashew Cream Parfaits (Whole Foods Market) --> How adorable would this be with blueberries instead of mango?


Avocado Fudgesicle --> Because you can't have a Fourth of July celebration without a popsicle.


Rhubarb and Strawberry Quinoa Crumble (Green Kitchen Stories) --> Strawberries and rhubarb are a classic summer combination. How incredible does this crispy quinoa and buckwheat flake topping look?


Cantaloupe (or Watermelon!) Aguas Fresca --> Try this with watermelon and frozen blueberries for a beautiful Fourth of July inspired drink!


Berry Kombucha Sangria (Edible Perspective) --> Kombuncha is one of my favorite drinks and I bet it adds a fantastic flavor to sangria!
