Here are my favorite links from last week. For more, hang out with me on facebook and twitter. Would love to connect with you!
Banh Mi-Less Banh Mi Bowl (Keepin It Kind) --> When I lived in Atlanta for my dietetics internship, Lee's Bakery, who sells one of the best Banh Mi's in the nation, was right down the street. At $2.50 a sandwich with an unpaid internship, as you can imagine, I developed a deep love for the Banh Mi. I can't wait to try this vegan bowl of Banh Mi goodness, much more approachable than making the real thing from scratch!
Fried Green Tomato Pimento Grilled Cheese (A Cozy Kitchen) --> With some DiPrato's pimento cheese...drool.
Vanilla Pear Quinoa Granola (Strength and Sunshine) --> All this gluten free granola is sweetened with is pear puree and a little stevia extract. Have you ever tried quinoa in granola? You should!
Grilled Peaches with Sweet Cream and Crunchy Bits (Nutrition Stripped) --> There's nothing more perfect than a ripe, South Carolina peach. Except for maybe this.
Chocolate Covered Almond Butter Stuffed Figs (Honeystuck) --> I really hope heaven has a fig tree that grows chocolate covered, almond butter stuffed fruit.
Raw Chocolate Fudge with Cacao Nibs (My Darling Lemon Thyme) --> Clearly, I have a sweet tooth this week (as I eat the last of my raw chocolate with almond butter). But seriously, how could I not include this fudge made with tahini? Who knew tahini could work as a fudge ingredient? It's nuts! Actually, it's seeds!
Chris Pratt's Advice For Getting In Shape (Yahoo) --> I have a huge celebrity crush on Chris Pratt, loving him even before he got all buff and muscly. This advice makes me adore him just a little bit more.
The Comfort of Southern Food (Garden and Gun) --> Beautiful essay on Southern food. With all that's going on in the world today, it's no wonder the New Southern Cuisine is surging in popularity.
Fruit Recalled For Potential Listeria Contamination (Food Safety News) --> There's no way you can totally and completely protect yourself against food borne illness, but this is just another reminder of why it's important to buy local when possible.
Dr. Albert J Stunkard, Destigmatizer Of Fat, Dies at 92 (The New York Times) --> An amazing man who worked hard to remove the social stigma from obesity.
The Stylish Clothes This Woman Makes Out Of Secondhand Clothes Are Incredible (Buzzfeed) --> To end on a light note, have to shout out to a fabulous Columbia, SC blogger who has inspired me to break out the sewing machine!
This week on Avocado:
Spanish Chickpeas and Greens. Sometimes simple food is the best food.
Honey Bourbon BBQ Tempeh Sandwiches. Speaking of Southern food...
Chermoula Roasted Eggplant with Bulgur Salad. My favorite dish from the Jerusalem cookbook.
OMG- where to start with this roundup? I love eating dates stuffed with peanut butter and figs stuffed with peanut butter as a quick snack- WHY did I not think of adding chocolate?! That Banh Mi bowl looks incredible! Can't wait to try some of these- great roundup!
