Friday Favorites 8/1/14

Happy Friday! I hope you had a fantastic week! We spent last weekend in Beaufort, celebrating a friends birthday at Waterfest. Us Southerners and our small town festivals. I will admit, I was pretty exhausted starting this week after consuming my weight in BBQ chips, but after catching up on sleep and vegetables, I felt back to normal by Tuesday. The rest of the week was pretty busy and uneventful, since I've been trying to get ahead on client work and my writing since next week I'll be training almost every day for a one day a week job at a local hospital.

If you're in Columbia, SC, hope to see you at Arts & Draughts at the Columbia Museum of Art! It's a blast with great live music, local beers and guided tours of the art exhibits. Basil Roasted Eggplant With Heirloom Tomatoes and Balsamic Drizzle (With Food and Love) --> When eggplant and heirloom tomatoes are at their peak, a simple preparation like this is simply incredible. 
Strawberries & Yogurt Brulee (Hungry Girl Por Vida) --> Ohhh I can't wait to break out my mini blow torch that's been collecting dust so I can make this!

Vegan Lentil, Kale, and Salsa Verde Enchiladas (Hummusapien) --> Lentils, kale, salsa verde, cashew cheese...basically all of my favorite things in enchilada form!

Quinoa Patties with Harissa and Poached Egg (Naturally Ella) --> I could find an excuse to eat harissa on everything. In fact, I'm eating it as we speak!
Grilled Salmon with Pickled Huckleberry Relish (Feasting at Home) --> Have you heard of the New Nordic Diet? It's basically the hipster little brother of the Mediterranean Diet. This dish is a perfect example!

Sweet Pea Millet Cakes (Sunday Morning Banana Pancakes) --> Millet is more than birdseed. These cakes look so yummy!

2014 Xtreme Eating Awards (CSPI) --> French toast with 2,700 calories. A 2,400 calorie steak "garnished" with two sausages. This years winners were particularly horrifying. While I doubt anyone orders these dishes thinking it's a balanced, nutritious meal, keep in mind the runners up probably weren't too far off. 
Americans Still Avoid Fat More Than Carbs (Gallup) --> I was surprised by this, since I thought most people were past the low fat craze. In my practice, I hear much more carb confusion than anything. Stop avoiding carbs and fats. Choose high quality, unprocessed fats and carbs and you'll be fine!
Processed Food Vs. Real Food: Why Nutrition Science Is So Confusing (And What To Do About It!) (Summer Tomato) --> It can be difficult to explain why processed foods cause bad health. On a scientific level, there's not one, simple theory that sums it all up. In the end, while the science is fascinating, it doesn't really matter. As Darya sums it up - "Nutrition is complicated. But eating is not."
Sleep: An Ingredient For A Healthy Life (Food & Nutrition) --> If you've been exercising and eating healthier but still not losing weight, try catching more zzz's. Sleep does more than help you feel rested and energetic. Inadequate sleep can slow down metabolism and raise blood sugar levels.
Why We Should Probably Stop Searching For A Soulmate (Hello Giggles) --> I won't claim to be a relationship expert, but I think this is such an important read for any long term or engaged couples. Calling your spouse your soulmate puts a lot of pressure on the relationship to be perfect, and will make it that much harder to get through the tough times. Take it from someone who is happily married to her best friend and the love of her life, not a soulmate!
6 Food Festivals Worth Traveling For (Yahoo) --> Can we go to all of these? Excited to see I'll be in Sonoma visiting my sister-in-law for Sonoma Wine Country Weekend! Anyone want to gift us press passes to the Taste of Sonoma event? Or maybe a Winemaker Barbeque?? Anyone???
